Lamb, hogget and mutton

Our sheep are raised on diverse pasture, grazing naturally on grass, herbs and forage through the seasons.

We’ve learned a lot about sheep in the past year. Much of it has been about livestock handling, pasture management and the weather(!) but some of it has been about the personalities and what it takes to give sheep a healthy and happy life.  We think a life well lived produces a healthier animal which in turn will produce a better source of nourishment for ourselves.

We plan to have meat available for sale at the end of 2026 / early 2027.  Our sheep are professionally slaughtered and butchered with Halal certification.  We’re selling the meat direct from the butcher in half carcass boxes, cut as described below.

Lamb

Lamb is the meat from a sheep under one year old.  It’s tender and mild in flavour.

We plan to have this year’s lamb available to purchase for the first time around the end of 2026 / early 2027.

Half lamb box

Half lamb boxes are priced per kg. A typical box will weigh around 10-12kg with cuts as below (weights approximate):

  • Half roasting leg joint (1.5kg)
  • Half diced boneless leg (1.5kg)
  • Roasting shoulder joint (2.5kg)
  • Mince (1.5kg)
  • Mixed selection of chops and ribs (2kg)
  • Neck (0.5kg)
  • Bones (1kg)

Hogget

Hogget is the meat from a sheep between one and two years of age.  Hogget has had the benefit of a second season grazing pasture, allowing the meat to develop greater depth and character than lamb.

Half hogget box

Half hogget boxes are priced per kg. A typical box will weigh around 10-13kg with cuts as below (weights approximate):

Mutton

Mutton is the meat from a sheep older than two years.  It benefits from long, slow cooking to bring out the richness and depth of flavour.

Half mutton boxes are priced per kg.  A typical box will weigh around 10-15kg with cuts as below (weights approximate):

  • Diced boneless leg (3kg)
  • Diced shoulder on bone (3kg)
  • Mixed selection of chops and ribs (2.5kg)
  • Mince (1kg)
  • Neck (0.5kg)
  • Bones (1kg)

Product care

Our sheep are professionally slaughtered with Halal certification.  The carcasses are hung to develop the flavour, before cutting and vacuum packing.

Keep refrigerated at 5° C or lower on the bottom shelf of the fridge and consume by the use-by date.

If you are going to freeze the meat, do it on the day of collection within the unopened vacuum packs.  Use within 3 months.  To defrost, remove the meat from the freezer 24 hours before use and let it defrost in the fridge.
